For centuries, soul food has been cooked and seasoned with pork products, and fried dishes are usually cooked with hydrogenated vegetable oil (“shortening” or “Crisco”), which is a trans fat. Unfortunately, regular consumption of these ingredients without significant exercise or activity to work the calories off often contributes to disproportionately high occurrences of obesity, hypertension, cardiac/circulatory problems and/or diabetes. It has also been a factor in Africans, often having a shortened lifespan. More modern methods of cooking soul food include using more healthful alternatives for frying (liquid vegetable oil or canola oil) and cooking/stewing using smoked turkey instead of pork.

Fast food restaurants are more dominant in Black communities.  Our people are also less likely to go work out in our communities due to the conditions.  So, what can we do?

Food Alternatives:
Baked foods are always a great start to create healthier eating habits. Putting more fresh fruits and vegetables in your diet also boosts it a great deal. Also, drink plenty of water daily. This not only cleanses your system but also helps to clear your skin.

Portion your food. If you are a busy person and you dont have time to cook. Prepare you meal the night before. For instance. Here a couple of meals that are easy quick and delicious:

Curry Chicken
Wheat Rice
Fresh Broccoli
Roll (optional)

or
Smoked Salmon
Spinach Salad
or Steamed Vegetables
 
 
 Breakfast Alternatives
Too often we are associated with eating bacon, eggs, grits and ham. So here are some more nutritious and healthier foods for breakfast:
Wheat waffles/pancakes
Fruit Salad
Muffins with jam
Bagel
Yogurt
Trail Mix
Vegetable Soup
Oatmeal
Toast w/Grits
Baked Fish
Tuna /spinach and tomatoe

“Broiled Red Snapper with Sicilian Tomato Pesto”

 
 
 Ingredients

  • Pesto:
  • 2  cups  basil leaves
  • 2  tablespoons  pine nuts, toasted
  • 2  tablespoons  extravirgin olive oil
  • 2  garlic cloves, minced
  • 1/4  cup  (1 ounce) grated Parmigiano-Reggiano cheese
  • 1/8  teaspoon  crushed red pepper
  • 1 1/2  cups  chopped plum tomato (about 3 medium)
  • 1/2  teaspoon  salt
  • 1/2  teaspoon  freshly ground black pepper
  • Fish:
  • 6  (6-ounce) red snapper or other firm whitefish fillets
  • 1/4  teaspoon  salt
  • Cooking spray
  • Remaining ingredient:
  • 3  cups  hot cooked orzo

    Preparations
    To prepare pesto, combine first 4 ingredients in a food processor; process until smooth. Add cheese and red pepper; process until blended. Transfer mixture to a bowl. Add tomato, 1/2 teaspoon salt, and black pepper, stirring gently to combine.

    Preheat broiler

    To prepare fish, sprinkle fish with 1/4 teaspoon salt. Arrange fish on a broiler pan coated with cooking spray, and broil 8 minutes or until fish flakes easily when tested with a fork. Place 1/2 cup orzo on each of 6 plates, and top each serving with 1 fillet and 1/4 cup pesto

      Great stuff! I’m going to try that recipe as I as I get the means to do so.

      I think that it is also appropiate to add that vegetables is a great way to go if you want to eat healthy and are on a budget. Natural grown veggies from a market tend to be be more bang for your buck and so you can make a week’s worth of food off of $5-$10 spent on one trip.
